Liquid nitrogen is an extremely cold substance and can give u frostbite nearly imediatly if u touch the source. but since she is not touching the source, she will be fine and it is perfectly safe to swim in

uhh.. liquid nitrogen is cold, it won't make water evaporate
its the nitrogen that's evaporating because its being warmed up by the water
i.e. nitrogen vapour
